Grains for Good
Today, much of the spent grain from the production of beer at craft breweries all over the world goes straight to the landfill. The leftover grains constitutes as much as 85 percent of a brewery's total by-product. In the UK alone, 900 million kilos are produced each year, which generates 2.16 million tonnes of carbon. All of this has a huge negative impact on the climate.
My business idea it to collect spent grain from local breweries and upcycle into baked goods. As a homebrewer, I've collected my own spent grains and together with my business partner who is a baker, we have experimented with protein bars, cookies, muffins, pepernoten. The grain is nutritionally balanced and a rich source of fiber, protein, and phenolic compounds. More importantly, the end result is delicious, more nutritious and indistinguishable from baked goods made from flour. Ultimately, my goal is to create a sustainable food brand with deep-rooted social impact.
